Ramadan is a time for many families to try new dishes or cook traditional recipes passed down from their ancestors. Ouzi is a classic communal Arabic dish shared by families.
During large events like weddings, it is traditional to place a whole Ouzi in the middle and have everyone eat from the same plate. This is one of the favorite dishes of Ali Fouad, head chef at the award-winning Al Nafoorah, located in Jumeirah Al Qasr.
Chef Ali, a chef with over 20 years of experience, grew up in Lebanon where fresh organic produce was abundant. He tries to recreate the Middle Eastern flavors he ate as a child and puts his own spin on it.

Here’s a recipe he shared for the classic dish:
Ingredients:
- Leg of lamb (or any part of the lamb) 250 g

Cooking method
We marinate the leg of lamb, cover it and put it in the oven for an hour until it is well cooked.
To prepare oriental rice, we first soak basmati rice in water. Next, add ghee to a large pot. Once melted, add the onion and spices. Add the minced lamb and sauté until cooked with the spices. Now, add the soaked basmati rice and add enough water to cover the rice. Keep the pot covered with aluminum foil for 15 minutes or until the rice is cooked.
On a serving platter, layer hot rice and place the cooked lamb leg in the center. Serve with yogurt and cucumber sauce or any other sauce of your choice.
